Linamaw na Buko
I have enjoyed this dessert ever since I moved to my hometown. Our backyard is full of coconut trees and I would just ask my grandpa which ones I could take so I can make it to "lamaw na butong". We have really tall coconuts and some really short where I can just grab the fruit. Sometimes I add Orange Soda(Royal) but this photo I omitted it from the ingredients.
Ingredients:
Fresh Coconuts
Condensed Milk
Crackers
Ice
Directions:
1. Scrape Coconut. Set aside juice.
2. Mix coconut scraping, juice, condensed milk.
3. Add crushed Ice and crushed crackers.

Fish Tacos
I love Mexican Foods and Japanese Foods, Oh and Chinese, and Filipino.. Long story short.. I LOVE FOOD! I wanted to make a Soft Shell Taco but the grocery stores selling soft shells are like 2 hours away from my house and I do not know how to make one myself so I'd have to sell with the Hard Shell and it still tastes great. Soft Shell Tacos will have to wait. ;-)
Ingredients:
Taco Shells
Taco Sauce
Fish Fillet
Lettuce
Cheese
Tomato
Onions
Directions:
1. Cut fish into little pieces and marinade with salt.
2. Dip fish in batter(egg and starch) then cook in medium heat till golden brown.
3. Mix Taco sauce powder with water, heat, then mix cooked fish till sauce is thick.
4. Put in taco shells then add garnish(lettuce,tomato,cheese and onions)
PS. I also don't know how to make my own Taco sauce so I settled for McCormick's Taco Sauce. (For now) :-)

Kinilaw na Isda
The very first time I tried this dish was in College, I only gave it a bite since we used "bolinaw" and I was not sure I would like it. But somebody requested I make this so I did but I use a different fish and surprisingly it was really good.
Ingredients:
Fish
Onions
Ginger
Tomato
Vinegar
Calamondin (lemonsito)
Directions:
1. Debone fish then cut it into bite size.
2. Slice the onions and tomatoes and mix with the fish.
3. Peel and slice the ginger, smash and then mix with the rest.
4. Add the vinegar and lemonsito. Taste it and make sure its not so sour.
Mix well. Serve.
PS. I forgot what fish I used for this but they say the most popular fish to be used for "kinilaw" is tangigue.

Chicken Salad
Chicken is one of the most popular meat you can add on a salad. Here's my own mix of ingredients.
Ingredients:
Chicken Breast (deboned)
Hard boiled Eggs
Green Olives
Lettuce
Tomatoes
Walnuts
Directions:
1. Cut chicken into nuggets put in batter (egg and flour) then cook until golden brown.
2. Cut lettuce, tomatoes, eggs and olives into bite sizes.
3. Mix all Ingredients.
Serve with any salad dressing you desire.

Escabeche
Filipino Version of the Mediterranean Dish "Escabeche".
Ingredients:
Fish
Ginger
Garlic
Bell Pepper
Carrots
Onions
Soy Sauce
Vinegar
Brown Sugar
Directions:
1. Marinade Fish with salt. Fry both sides until golden brown. Set aside.
2. Cut spices into strips.
3. Saute onions and garlic in a pan for 2 minutes. Add bell pepper, ginger and carrots. Saute for 3 minutes.
4. Add soy sauce, vinegar and brown sugar into the pan as sauce.
5. As soon as the sauce is boiling, Add the fried fish and mix for 2 minutes.
Serve.
Fried Wanton
My Version of Chinese Fried Wanton.
Ingredients:
Ground Pork
Wanton/Wantan Wrapper
Spring Onions
Garlic
Directions:
1. Slice onions and garlic into really small pieces and mix into the ground pork. Add salt.
2. Put a teaspoonful of the ground pork in the wrapper.
3. Gather the edges of the wrapper and gently press them together.
4. Deep fry in medium heat until golden brown.
Serve with ketchup or sweet chili sauce.
Hawaiian Chicken Salad
Ingredients:
Red Apples
Green Apples
Pineapples
Lettuce
Chicken Breast(deboned)
Raisin
Mayonnaise
Tomato
Directions:
1. Cook Chicken Breast and cut into cubes.
2. Cut tomatoes, apples and pineapples into chunks.
3. Mix all ingredients in a bowl.
4. Season with a little salt and sugar.
Best when served chill.

Chopsuey
Ingredients:
BroccoliCauli Flower
Quail Eggs
Cabbage
Carrot
Mushrooms
Young Corn
Pork meat
Directions:
1. Cut meat into bite size and marinade with salt and soy sauce.2. Slice carrots, corn, mushrooms, broccoli and cauliflower into bite size and sprinkle a little salt. Set aside.
3. Boil quail eggs in water for 2-4 minutes. Peel off shell and set aside.
4. Saute meat with onions and garlic. When meat is a bit tender. Add water.
5. Add all other ingredients except for cabbage once water boils. Taste the soup and add salt if needed.
6. When all ingredients are tender, add cabbage and eggs.
Serve.

General Tso's Chicken
This is my version of General Tso's Chicken.
Ingredients:
Chicken Breast/Thigh (deboned)
Soy Sauce
Spring Onions
Brown Sugar
Vinegar
Corn Starch
Eggs
Directions:
1. Marinade Chicken with Salt.
2. Coat Chicken in a batter(eggs and starch) and then cook until golden brown.
3. Combine 1 tablespoon vinegar, 3 tablespoon soy sauce, 3 tablespoon brown sugar and 1 tablespoon cornstarch for the sauce.
4. Stir fry chicken and add sauce mixture until thick and bubbly.
Garnish with Onions and Serve.
The sauce mixture by the way is good for at least 1/2 kilo of Chicken so just adjust the amount depending on the Chicken.
