Filipino Version of the Mediterranean Dish "Escabeche".
Ingredients:
Fish Ginger Garlic Bell Pepper Carrots Onions Soy Sauce Vinegar Brown Sugar
Directions:
1. Marinade Fish with salt. Fry both sides until golden brown. Set aside. 2. Cut spices into strips. 3. Saute onions and garlic in a pan for 2 minutes. Add bell pepper, ginger and carrots. Saute for 3 minutes. 4. Add soy sauce, vinegar and brown sugar into the pan as sauce. 5. As soon as the sauce is boiling, Add the fried fish and mix for 2 minutes.
